Hey Lykkers! How many times have you looked at that can of chickpeas in your cupboard and thought, "What do I even do with this?" Don’t worry, we’ve all been there. But let me tell you, chickpeas are anything but boring. They're creamy, filling, budget-friendly, and when cooked right? Absolutely addictive.
Today, I’ve got two mouthwatering ways to cook chickpeas that you’ll want to make on repeat. One is the classic creamy hummus we all know and love. The other? A Moroccan-style spiced chickpea dish that brings sweet and savory together in the best way. Let’s get into it!
Forget store-bought hummus—this homemade version is smooth, flavorful, and way more satisfying. Plus, it's super easy.
What You’ll Need:
- 2 cans chickpeas (keep the liquid from one!)
- ½ cup lemon juice
- ½ cup tahini
- 2 garlic cloves
- ½ cup olive oil
- Salt to taste
- Sumac & chopped parsley for garnish
Let’s Make It:
1. Blend one full can of chickpeas (with liquid) and another drained can in a food processor.
2. Add lemon juice, tahini, garlic, olive oil, and salt.
3. Blend until it’s super smooth and creamy.
4. Scoop into a bowl, drizzle with olive oil, and sprinkle parsley and sumac on top.
Serve with pita, veggies, or use it as a sandwich spread. Warning: it disappears fast!
Now for something a little different. This Moroccan-style chickpea dish is perfect as a side or even a light main. It’s rich, spiced, and has a little sweetness from raisins that takes it to another level.
Ingredients:
- 2 cans chickpeas
- 1 onion (sliced)
- 2-3 tbsp olive oil
- 2 garlic cloves (minced)
- 1 tsp cinnamon
- 1 tsp black pepper
- 1 tsp salt
- ¼ tsp turmeric
- ½ cup raisins
- 1 cup water
- 2 chicken stock cubes
- Parsley, sumac, or cilantro for garnish
How to Cook:
1. Sauté onions in olive oil until soft.
2. Add garlic, cinnamon, pepper, and salt—get those aromas going!
3. Mix in chickpeas, turmeric, and raisins. Stir it all together.
4. Add water and bouillon cubes, then let it simmer for 10 minutes.
5. Top with fresh herbs and serve hot. Perfect with grilled meat or rice!
See, Lykkers? Chickpeas don’t have to be boring. With a few simple ingredients, you can turn them into a comforting dip or a spicy side that tastes like it came straight from a restaurant.
So go ahead—raid your pantry and give one of these recipes a try. Your taste buds (and wallet) will thank you!
